- 1 1/2 cups sliced strawberries
- 1 tablespoon granulated sugar
- 1 teaspoon lemon juice
- 1 cup all-purpose flour
- 1 tablespoon granulated sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 3 tablespoons cold butter, cubed
- 1/3 cup milk, plus more as needed
- Cooking spray
- 1 cup whipped cream or whipped topping
- Optional: powdered sugar, for serving
Instructions
- stir together the strawberries, 1 tablespoon sugar, and lemon juice. Set aside while you make the biscuits.; whisk together the flour, 1 tablespoon sugar, baking powder, and salt.
- Cut in the cold butter with a fork or pastry cutter until the mixture looks crumbly.
- Stir in the milk just until a soft dough forms. Add 1 teaspoon more milk at a time if the dough is too dry.
- Pat the dough into a 1-inch-thick round and cut into 6 small biscuits.
- Preheat the air fryer to 340°F. Lightly spray the basket or use air fryer parchment.
- Place the biscuits in the basket with space between them. Air fry for 7 to 8 mins., until golden and cooked through.
- Let the biscuits cool for 5 mins., then split them open.
- Spoon strawberries and their juices over the bottom halves, add whipped cream, and top with the biscuit lids. Dust with powdered sugar if desired.
