Turkey & Poblano Quesadilla with Black Beans

Ingredients

  • 2 whole-wheat tortillas
  • 6 oz turkey breast, diced small
  • 1/4 cup roasted poblano strips
  • 1/3 cup black beans, drained and rinsed
  • 1/4 cup shredded reduced-fat cheese
  • 1/4 tsp ground cumin
  • 2 Tbsp salsa, for serving
  • Cooking spray or 1 tsp olive oil
  • Salt and black pepper, to taste

Instructions

  1. Heat a skillet over medium heat and lightly coat with cooking spray or olive oil.
  2. Add the turkey and cook for 4 to 5 minutes, stirring occasionally, until cooked through.
  3. Season lightly with salt, black pepper, and cumin.
  4. Stir in the poblano strips and black beans and cook 1 minute more, just until warmed through.
  5. Place the tortillas on a clean surface.
  6. Divide the filling between the tortillas, spreading it over one half of each, and top with the cheese.
  7. Fold each tortilla over and cook in the skillet for 2 to 3 minutes per side, until golden brown and the cheese melts.
  8. Cut into wedges and serve with salsa.
