- 2 cups rolled oats
- 2 medium apples, diced
- 2 large eggs
- 1 cup unsweetened almond milk
- 1/4 cup maple syrup
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp baking powder
- Pinch of salt
- 1 Tbsp melted coconut oil
- Additional coconut oil for greasing
Instructions
- Preheat oven to 350°F (177°C). Grease a 9×9-inch baking dish with coconut oil.
- In a large bowl, whisk together eggs, almond milk, maple syrup, and melted coconut oil.
- Stir in rolled oats, diced apples, cinnamon, nutmeg, baking powder, and salt until combined.
- Pour the mixture into the prepared baking dish and spread evenly.
