Crispy Fish Sandwich with Light Tartar Sauce

Ingredients

  • 2 white fish fillets
  • 1/4 cup breadcrumbs
  • 1 egg, beaten
  • 2 whole grain sandwich thins or buns
  • Lettuce leaves
  • Tomato slices
  • 2 Tbsp light mayonnaise
  • 1 Tbsp plain Greek yogurt
  • 1 tsp relish
  • 1 tsp lemon juice

Instructions

  1. Preheat oven to 425°F (218°C) or preheat air fryer.
  2. Dip fish fillets in egg then breadcrumbs; place on baking sheet. Bake or air fry for 10–12 minutes until crispy and cooked through.
  3. In a small bowl, mix mayonnaise, Greek yogurt, relish, and lemon juice to make tartar sauce.
  4. Assemble sandwiches: bun, lettuce, fish fillet, tomato, and tartar sauce.
