Pork & Scallion Kebabs with Herbed Couscous

Ingredients
- 8 oz pork tenderloin, cut into 1-inch cubes
- 4 scallions, trimmed and cut into 2-inch pieces
- 1 Tbsp lemon juice
- 1 Tbsp olive oil
- 1 garlic clove, minced
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 1/2 cup dry couscous
- 1/2 cup boiling water or hot broth
- 2 Tbsp chopped parsley
- 1 Tbsp chopped mint
- 1/4 cup diced cucumber
- 2 Tbsp crumbled feta cheese
Instructions
- In a bowl, toss the pork and scallions with lemon juice, olive oil, garlic, salt, and pepper. Let sit 15 minutes.
- Thread the pork and scallions onto skewers.
- Place the couscous in a heatproof bowl.
- Pour the boiling water over it, cover, and let stand 5 minutes. Fluff with a fork.
- Stir the parsley, mint, cucumber, and feta into the couscous.
- Grill or cook the kebabs over medium-high heat for 8 to 10 minutes, turning occasionally, until the pork is cooked through.
- Serve the kebabs over or alongside the herbed couscous.
