Sesame Turkey Noodle Salad

Ingredients

  • 6 oz turkey breast, thinly sliced
  • 3 oz dry whole wheat spaghetti or brown rice noodles
  • 1/2 cup shredded cabbage
  • 1/4 cup shredded carrots
  • 1 Tbsp sliced green onions
  • 1 Tbsp light sesame dressing
  • 1 tsp rice vinegar
  • 1 tsp sesame seeds
  • 1 tsp olive oil
  • Salt and black pepper, to taste
  • Optional: chopped cilantro

Instructions

  1. Cook the noodles according to package directions until just tender.
  2. Rinse under cool water and drain well.
  3. Heat the olive oil in a skillet over medium heat.
  4. Add the turkey and cook for 4 to 5 minutes, turning as needed, until cooked through.
  5. Let cool slightly, then thinly slice.
  6. In a large bowl, combine the noodles, turkey, cabbage, carrots, and green onions.
  7. Whisk together the sesame dressing and rice vinegar.
  8. Pour the dressing over the salad and toss well.
  9. Sprinkle with sesame seeds and finish with cilantro if desired.
