Pork Stir-Fry with Rice Noodles

Ingredients

  • 6 oz lean pork strips
  • 3 oz dry rice noodles, or 1 cup cooked rice noodles
  • 1 cup broccoli florets
  • 1/2 cup sliced bell peppers
  • 1 Tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 1 garlic clove, minced
  • Optional: 1 tsp rice vinegar or a squeeze of lime

Instructions

  1. Cook the rice noodles according to package directions until just tender. Drain and set aside.
  2. Heat the sesame oil in a large skillet or wok over medium-high heat.
  3. Add the pork strips and cook for 3 to 4 minutes, stirring often, until lightly browned and nearly cooked through.
  4. Add the broccoli and bell peppers and stir-fry for 3 to 4 minutes, until the vegetables are crisp-tender.
  5. Stir in the garlic and cook for 30 seconds, just until fragrant.
  6. Add the cooked noodles and soy sauce.
  7. Toss until the noodles are hot and evenly coated.
  8. Add rice vinegar or a squeeze of lime if desired, then serve immediately.
