- 2 medium sweet potatoes
- 6 oz lean ground turkey
- 1/2 cup black beans, drained and rinsed
- 1/2 cup diced tomatoes
- 1/4 cup diced poblano pepper
- 1/4 tsp chili powder
- 1/4 tsp cumin
- 1 tsp olive oil
- 1/4 cup shredded reduced-fat cheddar cheese
- Salt and black pepper, to taste
Instructions
- Heat the oven to 400°F.
- Pierce the sweet potatoes with a fork and bake for 35 to 45 minutes, until tender.
- Meanwhile, heat the olive oil in a skillet over medium heat.
- Add the ground turkey and cook until browned.
- Stir in the black beans, tomatoes, poblano, chili powder, cumin, salt, and pepper. Cook for 3 to 4 minutes, until heated through.
- Split the baked sweet potatoes lengthwise and fluff the centers with a fork.
- Spoon the turkey mixture into the sweet potatoes and top with cheese.
- Return to the oven for 3 to 5 minutes, until the cheese melts, then serve.
