- 4 large cabbage leaves
- 6 oz lean ground beef
- 1/4 cup cooked brown rice
- 1/4 bell pepper, finely diced
- 1/4 cup diced onion
- 1/2 cup tomato sauce
- 1/4 tsp garlic powder
- 1/4 tsp smoked paprika
- Salt and black pepper, to taste
Instructions
- Heat the oven to 375°F and bring a large pot of water to a boil.
- Blanch the cabbage leaves for 1 to 2 minutes, just until pliable. Drain and let cool slightly.
- In a bowl, mix the ground beef, rice, bell pepper, onion, garlic powder, smoked paprika, salt, and pepper.
- Divide the filling among the cabbage leaves.
- Fold in the sides and roll tightly.
- Place the rolls seam-side down in a baking dish and spoon the tomato sauce over the top.
- Cover loosely with foil and bake for 30 to 35 minutes, until the beef is cooked through and the cabbage is tender.
- Serve while hot.
