Spinach Turkey Meatballs with Marinara & Spaghetti Squash

Ingredients
- 1 pound lean ground turkey
- 1 cup chopped spinach
- 1 egg
- 1/3 cup breadcrumbs
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 cup marinara sauce
- 1 medium spaghetti squash
- Salt and pepper to taste
- Optional: chopped basil or parsley for garnish
Instructions
- Heat the oven to 400°F.
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Place the halves cut-side down on a parchment-lined sheet pan and bake for 35 to 45 minutes, until tender.
- In a bowl, mix the ground turkey, spinach, egg, breadcrumbs, garlic, and Italian seasoning until just combined.
- Form into small meatballs.
- Bake the meatballs for 15 to 18 minutes, or brown them in a skillet, until they reach 165°F.
- Warm the marinara sauce in a skillet or saucepan and add the meatballs.
- Let the squash cool just enough to handle, then scrape the flesh into strands with a fork.
- Divide the spaghetti squash between plates and top with the meatballs and sauce.
