Air Fryer Russet French Fries
Drying the soaked potatoes thoroughly is the key to crisp fries because surface moisture turns to steam and softens the edges. The 30-minute soaking time is included in prep time but excluded from total time.

Ingredients
- 6 medium russet potatoes, peeled
- 2 Tbsp olive oil
- 1 tsp salt, or to taste
- Dipping sauce, for serving, optional
Instructions
- ADVANCE PREP REQUIRED
- Cut the potatoes into even 1/4-inch-thick fries.
- Place them in a large bowl of cold water and soak for at least 30 minutes.
- Drain and dry the potatoes very thoroughly with clean towels or paper towels.
- Preheat the air fryer to 360°F.
- Toss the dry potatoes with the olive oil.
- Arrange them in the basket in an even layer, cooking in batches if needed.
- Air fry for about 30 minutes, shaking the basket 2 to 3 times, until golden and crisp.
- Season with salt while hot and serve with dipping sauce, if desired.
