Ingredients

  • 8 oz boneless skinless chicken breast
  • 1/2 apple, diced
  • 1/4 cup halved grapes
  • 1/4 cup chopped celery
  • 2 Tbsp plain Greek yogurt
  • 1 Tbsp mayonnaise
  • 1 Tbsp chopped walnuts
  • Salt and black pepper, to taste
  • 2 cups mixed greens
  • 1 tsp olive oil

Instructions

  1. Pat the chicken dry and season with salt and pepper.
  2. Heat the olive oil in a skillet over medium heat.
  3. Cook the chicken for 5 to 6 minutes per side, until it reaches 165°F.
  4. Let cool slightly, then chop.
  5. Combine the chicken, apple, grapes, celery, yogurt, mayonnaise, and walnuts.
  6. Stir until evenly coated.
  7. Season to taste.
  8. Serve over mixed greens.
