Lightened-Up Chicken Parmesan

Ingredients

  • 2 boneless skinless chicken breasts, halved horizontally
  • 1/2 cup whole-wheat panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1 egg, beaten
  • 1 cup marinara sauce (no-sugar-added)
  • 1/2 cup part-skim shredded mozzarella
  • Cooking spray
  • Salt and pepper

Instructions

  1. Preheat oven to 425°F (218°C). Lightly grease a baking sheet.
  2. Mix panko, Parmesan, garlic powder, Italian seasoning, salt, and pepper in one shallow bowl. Place beaten egg in another.
  3. Dip chicken cutlets into the egg, then coat with the breadcrumb mixture, pressing lightly to adhere.
  4. Arrange breaded chicken on the prepared baking sheet and spray the tops with cooking spray.
  5. Bake for 15 minutes, flipping halfway, until chicken is golden and cooked through.
  6. Spoon marinara sauce over each cutlet and sprinkle with mozzarella. Return to the oven and bake until cheese melts, about 5 minutes.
  7. Serve immediately with a side salad or roasted veggies.
