- 2 boneless skinless chicken breasts, halved horizontally
- 1/2 cup whole-wheat panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning
- 1 egg, beaten
- 1 cup marinara sauce (no-sugar-added)
- 1/2 cup part-skim shredded mozzarella
- Cooking spray
- Salt and pepper
Instructions
- Preheat oven to 425°F (218°C). Lightly grease a baking sheet.
- Mix panko, Parmesan, garlic powder, Italian seasoning, salt, and pepper in one shallow bowl. Place beaten egg in another.
- Dip chicken cutlets into the egg, then coat with the breadcrumb mixture, pressing lightly to adhere.
- Arrange breaded chicken on the prepared baking sheet and spray the tops with cooking spray.
- Bake for 15 minutes, flipping halfway, until chicken is golden and cooked through.
- Spoon marinara sauce over each cutlet and sprinkle with mozzarella. Return to the oven and bake until cheese melts, about 5 minutes.
- Serve immediately with a side salad or roasted veggies.
