Mini Spinach & Swiss Quiche Cups

Ingredients

  • 4 large eggs
  • 1/4 cup milk
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded Swiss cheese
  • 1/4 cup chopped mushrooms (optional)
  • Salt and pepper
  • 4 small phyllo dough sheets or wonton wrappers

Instructions

  1. Preheat oven to 375°F (190°C). Spray a muffin tin; line four cups with phyllo sheets or wonton wrappers.
  2. In a bowl, whisk eggs and milk; stir in spinach, cheese, mushrooms, salt, and pepper.
  3. Pour mixture into prepared cups.
  4. Bake for 15–18 minutes until eggs are set and crust is golden.
  5. Cool slightly before serving.
