  • 1 lb lean sliced sirloin or thinly sliced beef
  • 1 cup sliced mushrooms
  • 1 onion, thinly sliced

  • 4 slices provolone cheese
  • Salt and pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in skillet; cook onion, mushrooms, and bell pepper until softened. Remove.
  3. Add beef; cook until browned; return veggies; stir in Worcestershire sauce; season with salt and pepper.
  4. Stuff poblano halves with beef mixture; top each with half a slice of provolone.
  5. Bake for 15 minutes until cheese melts.
  6. Serve hot.
Gourmet Geek Tip

Slice the beef thinly against the grain so it stays tender. | Roast the poblano halves briefly before filling if you prefer softer peppers. | Serve with roasted potatoes or a crisp side salad.
