Sesame Chicken & Quinoa Stir Fry

Ingredients

  • 6 oz boneless skinless chicken breast, diced
  • 1/2 cup cooked quinoa
  • 1 cup broccoli florets
  • 1/2 cup snap peas
  • 1/2 cup sliced carrots
  • 1 tsp sesame oil
  • 1 Tbsp low-sodium soy sauce
  • 1 tsp grated fresh ginger
  • 1 tsp olive oil

Instructions

  1. Heat the olive oil and sesame oil in a large skillet over medium-high heat.
  2. Add the chicken and cook for 4 to 5 minutes, stirring occasionally, until lightly browned and cooked through.
  3. Add the broccoli, snap peas, and carrots. Cook for 3 to 4 minutes, until crisp-tender.
  4. Stir in the soy sauce and ginger.
  5. Add the cooked quinoa and toss until everything is hot and evenly coated.
  6. Serve immediately.
