Ingredients
- 6 oz turkey breast, thinly sliced
- 3 oz dry whole wheat spaghetti or brown rice noodles
- 1/2 cup shredded cabbage
- 1/4 cup shredded carrots
- 1 Tbsp sliced green onions
- 1 Tbsp light sesame dressing
- 1 tsp rice vinegar
- 1 tsp sesame seeds
- 1 tsp olive oil
- Salt and black pepper, to taste
- Optional: chopped cilantro
Instructions
- Cook the noodles according to package directions until just tender.
- Rinse under cool water and drain well.
- Heat the olive oil in a skillet over medium heat.
- Add the turkey and cook for 4 to 5 minutes, turning as needed, until cooked through.
- Let cool slightly, then thinly slice.
- In a large bowl, combine the noodles, turkey, cabbage, carrots, and green onions.
- Whisk together the sesame dressing and rice vinegar.
- Pour the dressing over the salad and toss well.
- Sprinkle with sesame seeds and finish with cilantro if desired.
